This is a secure and tasty option for all of you who aren’t into fruit cakes, especially during the winter. At the end, this is the season without fresh berry fruits, making it a perfect time for cakes and cookies, and me personally – I’m not into citruses and pears. This version of a Cherry cake with (frozen/dried) cherries and raisins is my absolute favorite!
It’s easy to make, smells amazing, delicious, and looks great! The most important thing – it’s not dry and hard to swallow like the rest of similar cakes and everyone will like it. I made it last night and fell in love with it all over again. I’m bringing the recipe here and you let us know how yours turned out in comments below!
- 1 cup suggar
- 1 cup butter or margarine
- 2 eggs
- 1/2 cup fresh orange juice
- 2 cups flour
- 1 teaspoon baking powder
- 1 1/2 cups golden raisins (frozen or dried)
- 1 cup frozen or glacied cherries (frozen or dried)
Preheat oven to 300°F and prepare loaf pan (coat it with baking paper or with flour).
Sprinkle raisins and cherries with a little flour. Mix butter and sugar together until this mixture is fluffy and light. Then add whisked eggs and orange juice and mix it all up together. Slowly add flour and baking powder into the mixture, and blend it until it is smooth. Then add raisins and cherries. Pour it into the prepared pan.
Put the pan into the oven and bake at 300°F for about 2½ hours. When it’s done, wrap the cake in plastic foil and store it over the night. When it’s time to serve the cake, cut the slices and sprinkle them with a mixture of powdered sugar and vanilla before serving.
