Grilled Bream with Broccoli


I live on the Mediterranean and I am used to light meals and colorful food. Olive oil, green and black olives, blue fish, cereals, and pulses are what is highly represented in our cuisine for centuries. This kind of nourishment brings a bunch of benefits, all about great health, feeling good and looking good. This kind of ingredients are good in prevention of cardiovascular disease, purifying blood and gives a lot of energy to your organism and body, and at the same time has beneficial influence on the digestive system.

Today I decided to share one of my favorite recipes with you. I’ve got inspired earlier today during the visit to local market, while I’ve been picking the fish and vegetables. Bream is one of my top 3 favorite fishes and this is the way I like it the most (I may for a bit love it more grilled on the gridiron, but oh well…). Except that, I made it with a few of my favorite seasonal vegetables and really small amount of spices, in addition to preserve bigger part of nutritious values.

NOTE: You can serve white wine with this meal, it will complete the aroma of fish and vegetables in this case. My recommendation is Italian white wine – Pinot Grigio. Choose it according to the offer on your market and affordable price. Saluti!

INGREDIENTS (2 servings)

  • 2 medium breams (about 350gr. each)
  • 2 tomatoes (chopped in slices)
  • 2 zucchini
  • 1 stalk of broccoli (medium one)
  • 6 table spoons of olive oil
  • 2 tea spoons of fresh lemon juice
  • 2 cloves of garlic (finely chopped)
  • fresh basil
  • fresh parsley
  • seasonings

PREPARATION

Clean the fish, wash it and dry, then spice it with salt and pepper. Let it rest. Wash and peal zucchini, slice it, spice with salt and let it rest for ½ hour to lose it’s sour juice. After that stove it briefly for a few moments on the teflon pan.

On the aluminum foil put one tea spoon of olive oil. Lay the fish over and spice it with lemon juice, add chopped tomatoes and previously made zucchini , sprinkle with 2 tablespoons of olive oil and with mix of basic and paisley. Make sure that foil rolls over the fish properly so content cannot flow out during the oven baking. Do the same with the other wish. Put them on the baking tray and bake them for 30 minutes in previously heated oven on 220°C

Cook broccoli in boiling water with one tablespoon of olive oil and one teaspoon of salt. Cook it for about 5 minutes in medium fire, long enough to become soft but not to lose all it’s nutritious ingredients. Decant it good before serving.

In the meantime you can make the dressing. You do not really need quantities for this dressing, you can do it approximately by your wish. I like it a bit thickly, so in the coffee cup of olive oil I put 2 cloves of garlic finely chopped, a pinch of salt, 2 teaspoons of fresh lemon juice and a small amount of finely chopped paisley. I like to sprinkle bream with this mixture when it is ready, it gives a special juicy and smooth taste.

SERVING

Prepared meal serve while it’s warm. Serve fish in the foil, with all the ingredients inside. Sprinkle it with dressing and serve with cooked broccoli.
